Healthy copper levels contribute to the development of red blood cells, nerves, the immune system and bones.  Copper deficiency can result from conditions such as Celiac Disease which cause malabsorption.  High levels of copper can be dangerous and may cause health problems affecting the liver and kidneys.  Copper exposure typically comes from contaminated food or water and workplace exposure in industries such as mining and metal working.  Copper toxicity can also be caused by Wilson's Disease which causes copper to be stored in tissues throughout the body.
